Our Service
We primarily source fish from the local markets: species from the UAE, Oman, as well as crustaceans from India and Pakistan. Our head purchaser has over fifteen years of experience on the markets and consistently obtains highly competitive prices which we pass on to our customers. We have also recently started work with a cooperative of small farmers in Norway who consistently produce superior quality salmon.
We deliver whole fish directly from the market, in ice-packed boxes in refrigerated trucks. This means that local fish is less than twenty-four hours old when it arrives in the kitchen, often less than twelve. We deliver fresh salmon hours after it has landed in the airport: we are committed to ensuring the preservation of the cold-chain (maintaining fish at 2-3°C from the moment it is packaged), working with strict hygiene conditions.
Filleted fish is processed the same day, and delivered in the late afternoon, again under strict temperature conditions.
